With this recipe, the ever-popular Mars Bar slice has had a chewy, nutty, utterly-delicious makeover. Featuring crunchy Rice Bubbles encased in caramel, nougat and peanuts with a thick layer of chocolate to finish, it is quick, easy and SO DARN GOOD! I promise, it is impossible to stop at one piece.

Just like Caramilk Rice Bubble slice, chocolate Crunchie slice and Caramello slice, this slice can be thrown together in no time at all, with no oven time and minimal mess. It is the ultimate emergency sweet treat.

What You Need

This slice is so easy to prepare using just 8 ingredients.

  • Butter – adds richness and helps to hold the slice together when set. I recommend using real, full-fat butter for best results.
  • Golden Syrup – binds the ingredients together and enhances all of the wonderful flavours. 
  • Snickers – chocolate bars made by Mars. They consist of nougat topped with thick caramel and peanuts that are encased in a layer of milk chocolate. You will need 150 grams (about 3 bars) for the slice. And you can add extra, chopped Snickers to the top of the slice, if you like!
  • Rice Bubbles – also called Rice Krispies. They add both crunch and chewiness to the slice. Rice Bubbles are cereal made from puffed, white rice that can be found in supermarkets. If you need the slice to be gluten-free, similar puffed rice products can be found in supermarkets and health food stores. 
  • Peanuts – add texture and extra peanut flavour. Salted peanuts are a great addition, but unsalted will work too. Chop them so that they incorporate nicely through the slice.
  • Caramel sauce – to make the slice extra sweet and chewy. You can use any thick caramel slice from the supermarket (in Australia, Bonne Maman or Nestle caramel sauce works great), or try the best homemade version !
  • Milk chocolate – use a good quality chocolate that you know and love to eat from the packet. Using a good quality chocolate will make all the difference in the final result.
  • Coconut oil – a little coconut oil is added to the melted chocolate to make it easier to slice. You can use vegetable oil, if preferred. Make sure the coconut oil or vegetable oil is warmed/melted first, or the chocolate may seize.

Equipment Required

The slice filling is made in a medium saucepan or in the microwave, using a heat-proof, microwave safe bowl. It can also be made in a Thermomix. You will also need a 20cm square slice or baking tin.

Step By Step Instructions

It’s as easy as 1,2,3,4 to prepare my sweet Snickers Slice – no baking required!

Step 1 – Make The Snickers Mixture

Melt the butter, two of the Snickers bars and golden syrup in a microwave-safe bowl on 50% power for 3 minutes or until the butter has melted.

Alternatively, melt on low heat in a saucepan. Stirring until smooth.

Step 2 – Mix

Stir in the Rice Bubbles, the third Snickers bar (chopped), the chopped peanuts and caramel sauce.

Mix until well combined.

Step 3 – Press The Mixture Into A Slice Tin

Press mixture firmly into your greased and lined cake pan.

Step 4 – Add The Chocolate Layer

Melt the chocolate in a microwave on 50% power for 3 minutes, or until melted, stirring every 30 seconds with a metal spoon.

Spread over slice and refrigerate until firm (approximately 4 hours).

Remove the slice from the refrigerator 20 minutes before cutting into squares with a warm, sharp serrated knife.

Expert Tips

  • If cooking on the stovetop, keep an eye on the mixture in the saucepan and cook over very low heat, so that the mixture does not catch on the bottom or split.
  • Add-ins – try sprinkling some peanut M&Ms, Reeses’ peanut butter cups, mini chocolate chips or more chopped Snickers over the top of the melted chocolate layer before chilling.
  • Leave the slice at room temperature for 20 minutes, to make slicing easier.
  • To slice, run a knife under hot water and dry it before cutting. A hot knife will glide through the chocolate layer much easier and cleaner.
  • The butter, golden syrup and Snickers can be melted in the microwave, stovetop or Thermomix, depending on preference.
  • For best results, make sure that you use a fresh box of Rice Bubbles/Rice Krispies. Stale Rice Bubbles will not be as crunchy!
  • The Snickers will not melt completely, some of the nougat will remain lumpy. This is fine and will add to the chewy texture of the slice.
  • Press the mixture into the tin very firmly so that it holds together nicely.
  • Allow the baking paper to hang over the edges of the tin slightly, as this will help you to remove the slice from the tin when set.

FAQS

Cutting The Slice

For clean, unbroken slices, take the slice out of the fridge 20-30 minutes before slicing. This will allow the slice to soften slightly, making it easier to cut. Use a warm and dry serrated knife to cut through the chocolate layer and then push through the Rice Bubble layer. The chocolate is more likely to crack if the slice is cut cold, straight from the fridge. You may also find it easier to cut the slice while it is still in the tin.

Storage

Snickers slice can be stored in an airtight container in the fridge for up to 1 week.

Can I freeze Snickers slice?

Yes! Wrap it whole, or wrap the individual slices and freeze it in an airtight container for up to 1 month. To thaw, place the slice in the fridge overnight, or place the slices at room temperature for 30-60 minutes.

  1. Grease and line a 20cm square cake pan with baking paper.

Thermomix Method

  1. Grease and line a 20cm square cake pan with baking paper.
  2. Place 2 of the Snickers bars, butter and golden syrup into the Thermomix bowl. Melt on 80 degrees, Speed 2 for 3 minutes.
  3. Add the rice bubbles, the remaining chopped Snickers bar, the chopped peanuts and caramel sauce. Mix on Reverse Speed 2 for 15 seconds or until completely combined.
  4. Press the mixture into the prepared tin.
  5. Place the chocolate melts and coconut oil into a clean Thermomix bowl.Melt on 50 degrees, Speed 3 for 2-3 minutes (scraping down the sides of the bowl occasionally).
  6. Spread over slice and refrigerate until firm (approximately 4 hours).
  7. Remove the slice from the refrigerator 20 minutes before cutting into squares with a warm knife.
