This easy smashed avocado recipe on crunchy sourdough toast is ready to serve in just 10 minutes!

With fresh herbs and creamy feta, this healthy recipe is so simple to make, and is the perfect dish for a lazy weekend brunch or light lunch.

Smashed avo on toast is such a classic cafe dish, and something I love to order when eating out but, like my cafe style muffins and banana bread, it’s so easy to make at home – and sooo much cheaper too!

In this recipe, mashed avocado flavoured with creamy feta and fresh herbs is piled onto a thick slice of crunchy sourdough toast. I love it topped with a poached egg too, or sprinkled with dukkah; but the really beautiful thing about avocado toast is that you can top it with exactly what you want, or leave it as is!

I adore avocados, from creamy guacamole, served on top of Mexican soup or Mexican lasagne, or even made into healthy brownies; they are a healthy, versatile and delicious ingredient.

  • Avocado  – 1 large or 2 small avocados, make sure they are ripe.
  • Lemon juice – use freshly squeezed lemon juice for the best results.
  • Fresh mint leaves  – fresh mint gives a lovely fresh taste to the mashed avocado. Chop it finely.
  • Fresh dill – the subtle aniseed flavour of dill is the perfect pairing with avocado and feta or goats cheese.
  • Soft and creamy feta or goats cheese – I recommend using a soft feta or goats cheese. Meredith Dairy is my favourite as it’s super soft and creamy.
  • Salt and black pepper – to taste.
  • Sourdough bread – toasted and buttered.

Equipment Required 

  • Sharp knife and chopped board – for chopping the fresh herbs and cutting open the avocado.
  • Bowl – for mixing.
  • Butter knife – for smashing the avocado.

Step By Step Instructions

Step 1 – Prepare Smashed Avocado

Halve the avocado.

A ripe avocado cut in half.

Scoop out the avocado flesh and place into a mixing bowl. Add the lemon juice, finely chopped fresh dill and fresh mint.

Use a butter (flat) knife to slice the avocado into chunks and combine it with the herbs and lemon juice. 

TIP: Using a flat knife rather than a fork means that you’ll end up with smashed and chunky avocado rather than ‘pureed mashed’ avocado.

Add the soft feta (or goats cheese) and use the knife again to gently mix through. Taste and season with salt and pepper. Set aside.

Step 2 – Plate Up

Toast and butter the sourdough bread.

Top with the smashed avocado. 

Serve the smashed avocado toast on it’s own or with poached eggs, dukkah, beetroot hummus and micro herbs.

Expert Tips

  • To test if an avocado is ripe:  gently press it. If the avocado gives slightly, then it’s ripe.
  • Use a knife rather than a fork to smash the avocado instead of mashing it. This leaves you with some chunkier bits, rather than a mashed consistency.
  • Best bread for avocado toast – it’s important to use a good quality sourdough (or even Turkish bread) as it holds its crunch once the smashed avocado is added.
  • Serve – serve the smashed avocado on toast on it’s own, or add poached eggs, micro herbs, dukkah and beetroot hummus for a restaurant quality dish! For a more substanial meal, add freshly sliced tomatoes or baked vine tomatoes, and some crispy bacon.

FAQs

Is t a difference between smashed avocado and guacamole?

Whilst both smashed avocado and guacamole are made from avocado, guacamole is a Mexican dip that can be chunky or smooth, and is flavoured with lime, coriander (cilantro) and onion, and often accompanied with a tasty cheese.
Smashed avocado is not only chunkier in texture, but tends to be flavoured with other herbs, sometimes soft cheeses such as feta or goats cheese, and is commonly served on a slice of toast, often accompanied with poached eggs.

What other herbs go with avocado?

Basil, coriander (cilantro), chives, thyme and oregano are all herbs that go well with avocado.

Can I freeze smashed avocado?

No, smashed avocado is not suitable for freezing.
