This no-fuss recipe is made from simple ingredients and is so versatile – serve it warm or cold for breakfast, lunch or dinner… or make it ahead of time and freeze for a protein-packed meal prep option!

Zucchini Slice is an absolute family favourite in our house. We always have a batch in the freezer – ready for a quick lunch box snack or an easy mid-week dinner. 

It’s one of those recipes that’s always on VERY high rotation in our house – as soon as we run out of our freezer stash, I make another batch!

So fill your freezer with zucchini slice… along with sausage rolls, mini quiches, fritters and homemade nuggets and have healthy and tasty savoury snacks on hand at all times!

What Is Zucchini Slice?

If you’re like me and grew up in Australia, you could easily be mistaken for thinking that everyone in the entire world knows what zucchini slice is and eats it on a regular basis… but apparently this just isn’t the case!

Zucchini slice is a classic Australian recipe and a much loved family favourite. And while it is less known worldwide, it’s a delicious and no-fuss savoury bake.

Also known as impossible pie (because it’s absolutely IMPOSSIBLE to mess up!!!), zucchini egg bake or crustless zucchini quiche, this simple slice is made using eggs, cheese, bacon, self-raising flour, oil and onion.

Once baked, zucchini slice has a beautiful golden crisp top and a moist egg based filling. It’s an incredibly versatile dish that can be eaten for breakfast, lunch or dinner – and is just as delicious when served warm or cold.

Equipment Required

Absolutely no fancy equipment is required when making zucchini slice!

All you need is a grater for the zucchini, a large bowl, and a spoon or whisk for mixing.

You’ll also need a 18cm x 28cm (7 x 11 inch) rectangular baking tray and an oven.

What You Need

My quick and easy zucchini slice recipe is made using pantry and fridge staples – making it a budget-friendly option.

  • Eggs – use large eggs (around 55g-60g each).
  • Self-raising flour – also known as self-rising flour. You can buy this from any major supermarket or make your own self-raising flour using plain flour and baking powder.
  • Oil – I recommend using vegetable oil in this recipe as it has a mild flavour. You can use canola oil instead, however, this will change the taste of the dish. Olive oil is not recommended for zucchini slice as it has too strong a flavour.
  • Cheese – any brand of tasty or cheddar cheese works beautifully in zucchini slice. You can also add some parmesan cheese to the mixture for extra flavour if you like.
  • Zucchini – also known as courgette. This recipe is a great way to use up zucchinis when they’re in season. Zucchini is the common term used in American English speaking countries, while courgette is the more common term among French and British English speaking people. Different name – same thing!
  • Onion – use a medium-sized brown onion.
  • Bacon – you can use any kind of bacon or ham for this recipe. Streaky bacon, middle bacon rashers, shortcut bacon or deli ham all work well. This is also a great way to use up any leftover Christmas ham (simply chop into small chunks). 
  • Salt & pepper – to season.

Step By Step Instructions

With just 10 minutes preparation time, simple ingredients and only one bowl required, this is the perfect simple family meal.

Step 1 – Whisk The Eggs

Place the eggs into a large bowl and whisk together well.

Step 2 – Add The Self-Raising Flour & Oil

Add the self-raising flour and oil to the bowl.

Continue mixing until smooth and combined.

Step 3 – Add The Remaining Ingredients

Add the grated cheese, grated zucchini, diced onion and chopped bacon.

Step 4 – Bake

Pour the mixture into the prepared baking dish and bake until lightly golden on top and cooked through.

TIP: Test to see if zucchini slice is cooked by inserting a skewer into the centre. If it comes out clean, it’s cooked.

Serving Suggestions

Thermomix Zucchini Slice is absolutely delicious served on it’s own… or you can take it up a notch by serving it with a tasty side:

  • Side salad – a simple side salad such as a Pear, Parmesan & Rocket Salad or a Roast Pumpkin, Spinach & Feta Salad perfectly complements zucchini slice.
  • Homemade bread rolls or scrolls – fill up those hungry tummies by serving zucchini slice with a batch of soft and fluffy white rolls or savoury ham and cheese scrolls.
  • Roasted vegetables
  • Crispy potato wedges – EXTRA crunchy!!!

Zucchini Slice Variations

This zucchini slice recipe is the classic version made with eggs, cheese, zucchini and bacon. However, t are so many delicious variations you can make – which are perfect for using up any leftover vegetables you have!

Here are some my favourite zucchini slice variations:

  • Zucchini & Carrot Slice – an all-time favourite with young kids!
  • Zucchini & Sweet Potato Slice – perfect for using up any extra sweet potato you have lying around.
  • Thermomix Zucchini Slice – make my classic recipe in your Thermomix!
  • Vegetarian option – just omit the bacon!
  • Extra veggies – grate any extra vegetables you have in your fridge (pumpkin, sweet potato, carrot and capsicum are all great options).
  • Extra cheesy – try a mixture of mozzarella and parmesan for a double cheese option!
  • Ham – use deli ham in place of the bacon.
  • Gourmet – add any of your favourite herbs, such as chives or parsley.
  • Zucchini Slice – muffin size – line a muffin tray with paper cases and divide the mixture amongst the muffin holes. Reduce the cooking time accordingly (start checking the muffins around the 15-20 minute mark).

FAQ’s

Can you make zucchini slice vegetarian?

Absolutely! Simply omit the bacon entirely.

Do I need to squeeze the liquid from the zucchini?

No! This is one of the only recipes using grated zucchini w you DON’T need to squeeze the liquid out! The zucchini slice will stay deliciously moist and eggy on the inside, while the top will be golden, crunchy and brown!

How do I know when my zucchini slice is ready?

Simply insert a skewer into the centre. If it comes out clean, it’s ready.

Expert Tips

  • If you notice that your slice is over-browning, simply place a sheet of foil loosely over the top and continue baking until cooked through.
  • Zucchini slice can be stored in an airtight container in the fridge for up to 5 days.
  • Alternatively, it can be frozen for up to 3 months – allow to defrost in the fridge before reheating (optional).
  • Reheat any leftovers in the microwave on high for 1-2 minutes.

  1. Grease a 20cm x 30cm rectangular baking tin and set aside.
  2. Preheat the oven to 180 degrees celsius (fan-forced).
  3. Place the eggs into a large bowl and whisk well.
  4. Add the self-raising flour and oil and whisk until smooth.
  5. Add the grated cheese, zucchini, onion and bacon and mix well. Season with salt and pepper.
  6. Pour into the prepared tin and bake for 30-40 minutes or until golden on top and cooked through (you can test if it’s ready by inserting a skewer into the middle or pressing lightly onto the top).
