Let’s rewind to the early 2000’s when Midori was ALL THE RAGE! What a FUN time!
I remember sipping Midori and champagne cocktails at one of my best friends weddings during that era… so, so delicious!
And let’s not forget everyone’s favourite combo of Midori with lemonade. Such simple times!
But then all of a sudden… Midori just seemed to disappear. Everyone had moved on to fancier cocktails like pornstar martinis, vodka sunrises and salted caramel Baileys concoctions.
Fast forward to today and it seems like Midori, with it’s sweet melon flavour liqueur, is finally making a comeback in the cocktail world.
And if this Midori Splice cocktail is anything to go by, we can all get excited about the return of our old friend!

- Midori – a sweet and fruity melon flavoured liqueur that is green in colour.
- Malibu – a Carribbean rum flavoured with coconut. Alternatively, you can use any brand of coconut rum.
- Pineapple juice – sweetened or unsweetened is fine. Easily purchased at the supermarket.
- Ice cubes – ice to chill really makes the flavours pop!
- Cream – use a pouring cream (not whipped). Light, thickened or heavy are all suitable. The cream is drizzled on top and cuts through the sweetness of the cocktail.
- Pineapple wedges – optional, to decorate.

All you will need is glasses for serving (any shape is fine).
Step By Step Instructions
This Midori Splice cocktail is as easy as 1.2.3…!

Step 1 – Pour the Midori, Malibu & Pineapple Juice
Measure the Midori liqueur, Malibu rum and pineapple juice directly into the serving glasses.
Step 2 – Add Ice Cubes
Gently add ice cubes until the cocktail is almost at the top of the glass.
Step 3 – Drizzle With Cream
Very carefully, drizzle a small amount of cream onto the top of the cocktail.
TIP: Use a teaspoon to gently spoon the cream on to the cocktail rather than pouring it directly from the container. This allows the cream to sit on the top of the cocktail.
Garnish with a pineapple slice (optional).

- You can use coconut cream in place of the cream for a dairy-free option.
- Add enough ice cubes to bring the cocktail almost to the top of the glass.
- You can use any brand of coconut rum you like.
- Sweetened or unsweetened pineapple juice can be used.
- Use a teaspoon to very gently drizzle the cream on top – this ensures the cream layer stays on rather than falling immediately to the bottom of the glass.
- Best served immediately – before the ice cubes melt and the cream falls slowly to the bottom of the glass.

Can this recipe be doubled or tripled?
Absolutely! It’s easy to increase the number of servings as the cocktail is prepared directly into the serving glasses, meaning that you can easily prepare the number of drinks you require.
Can I make Midori Splice dairy-free?
Yes you can! Simply substitute the cream with coconut cream and proceed as per the recipe.
TIP: Many people actually prefer using coconut cream as it makes the cocktail even more tropical flavoured!
Can I prepare Midori Splice ahead of time?
A splice cocktail should be prepared immediately before serving. Once the cream has been added, it will slowly sink down through the cocktail.
Serving immediately ensures that the cream layer remains on top – giving the cocktail a classic splice appearance!

Why is it called a Midori Splice?
It’s called a Midori Splice because t is a divide between the melon/rum/pineapple juice and the layer of cream on top. It’s also a similar flavour to the famous Splice ice-creams that are available in Australia.
