Homemade rocky road makes a simple and delicious gift for family and friends, and a popular addition to a dessert platter or grazing board for parties.

Just like my classic milk chocolate rocky road recipe and my Christmas-inspired white chocolate rocky road, this easy rocky road with licorice allsorts is all kinds of delicious (and SO quick and easy to make!)

What You Need

Rocky road is made from just a few basic ingredients. Once you know how to make rocky road, you are only limited by your imagination when it comes to the add-ins.

  • Milk chocolate melts – are small, round buttons of chocolate that are easy to melt, unlike chocolate chips. I generally use Cadbury or Nestle chocolate melts which are popular in Australia.
  • Coconut oil – this is an optional ingredient, but as it helps the chocolate to melt and makes the rocky road easier to cut, I do recommend adding it in.
  • Marshmallows – these are readily available in supermarkets, and are a traditional ingredient in rocky road. You can use sharp scissors to snip them in half to make it easy to cut!
  • Turkish Delight bars – milk chocolate covered Turkish Delight bars are available in the confectionery aisle of supermarkets.
  • Licorice allsorts – these are licorice confectionery in an assortment of shapes, covered in coloured fondant.
  • Sprinkles – also known as 100s & 1000s, these are a common pantry ingredient if you have kids!

Step By Step Instructions

In just a few simple steps, your easy Rocky Road with Licorice Allsorts will be ready to set in the fridge!

Step 1 – Melt The Chocolate

Place the chocolate melts and coconut oil (if using) into a microwave-safe mixing bowl.

Heat in a microwave, uncovered, on 50% power, stirring every 30 seconds with a metal spoon, for 4-5 minutes or until the chocolate and coconut oil melts.

Step 2 – Combine With The Add-Ins

Stir through the chopped marshmallows, Turkish Delight and licorice allsorts.

Step 3 – Spread Into Baking Tray To Set

Spread the mixture into a lined 18cm x 28cm rectangular paper lined slice tray.

Decorate with sprinkles before placing in the fridge for 2 hours or until completely set.

Step 4 – Slice And Serve

Use a sharp knife to cut into slices and serve.

FAQ’s

Are t any tricks to melting chocolate in the microwave?

T are a few tricks and tips to prevent the chocolate from ‘seizing’ when melting it in the microwave. You can read about them in this post .

What benefit does adding the optional coconut oil have?

The coconut oil helps with the consistency of the melted chocolate. It’s listed as optional because it’s not absolutely essential, but it does make the chocolate easier to work with.

Can I substitute dark or white chocolate melts instead of milk chocolate?

You can certainly substitute with dark chocolate melts with no other changes required. If substituting with white chocolate melts, I recommend using traditional Turkish delight, dusted with icing sugar, instead of the chocolate covered bars, if you want the rocky road to be remain as a white chocolate version.

Expert Tips

Cutting the marshmallows

It is much easier to use a pair of sharp scissors to cut your marshmallows in half. If the blades are sticking, give them a very light, quick, spray with some spray cooking oil.

Slicing the rocky road

If you are having trouble cutting the slice, run your knife under hot water and then dry it completely before cutting. The heat in the blade will help to cut the slice evenly! Also adding a little coconut oil to the chocolate makes it easier to cut without cracking.

Storing & freezing

Store rocky road in an airtight container in the fridge for up to 1 month.
Alternatively, you can freeze rocky road for up to 3 months. Allow to defrost in the fridge before consuming.

Instructions

  1. Line the base and sides of a 18cm x 28cm rectangular slice tray with baking paper.
  2. Place the milk chocolate melts and coconut oil into a heatproof, microwave-safe bowl. Heat, uncovered, on 50% power, stirring every minute with a metal spoon, for 4-5 minutes or until the chocolate and coconut oil melts. Remove from the microwave and stir until smooth.If using a Thermomix: Add the milk chocolate melts and coconut oil to the Thermomix bowl. Melt for 3-4 minutes, 50 degrees, Speed 2.
  3. Stir through the marshmallows, Turkish Delight and licorce allsorts with a spatula. If using a Thermomix: Add the marshmallows, Turkish Delight and licorce allsorts to the Thermomix bowl. Mix on REVERSE, Speed 2 until combined – using the spatula to help mix.
  4. Spread the mixture into the prepared baking tray, decorate with the sprinkles and then place in the fridge for 2 hours or until completely set.
  5. Use a sharp knife to cut into slices. (See notes)
