This chocolate overload Easter Rocky Road is filled with marshmallow eggs, mini Cadbury Creme Eggs, speckled eggs and raspberry lollies, and takes just 5 minutes to prepare. A great recipe to make with the kids over the Easter holidays.

It’s almost Easter which means it’s time to eat ALL the chocolate!

And what better way to do that, than to combine all your favourite Easter eggs into one delicious rocky road recipe.

It’s no secret that I adore rocky road.

The ease of making it, the deliciousness of eating it – it’s all just so good.

And while my White Chocolate Rocky Road and Clinkers Rocky Road are my go-to recipes during the year, when it comes to Easter I am ALL ABOUT EASTER ROCKY ROAD!

Why You’re Going To Love This Recipe

This is one of my all-time favourite Easter recipes!

Here’s what makes it so good:

  • Kids Recipe – My son and I love to make it in the lead up to Easter as a fun little activity.
  • Great For Using Up Leftover Easter Eggs – this recipe always gets a workout after Easter as a great way to use up leftovers!
  • Versatile – Mix and match with absolutely any of your favourite Easter eggs. I love to use marshmallow eggs, Creme Eggs, and mini speckled eggs, but you can use any flavour eggs you like.
  • Easter Gifts – Make a big batch of Easter rocky road and give it as gifts to your neighbours, friends and family.

What You Need

Chocolate, chocolate and more chocolate!

  • chocolate – use a good quality dark chocolate (or substitute with milk chocolate). The better the quality of chocolate, the better your rocky road will taste. I like to use Cadbury, Nestle, Hersheys or Lindt.
  • marshmallow eggs – I use Cadbury marshmallow eggs that can be bought from any supermarket in Australia. If you can’t find this brand you can use any marshmallow filled Easter egg or even just regular marshmallows.
  • mini speckled eggs – these come in a variety of brands such as M&Ms and Cadbury. They are pastel coloured eggs with a hard candy shell and chocolate inside.
  • mini Cadbury Creme Eggs – love them or hate them, these give this rocky road recipe a deliciously sweet, oozy, gooeyness.
  • lolly raspberries – these are a popular soft candy in Australia. If you can’t buy gummy raspberry lollies, you can substitute with any soft gummy candy you like.

Step By Step Instructions

Step 1 – Melt

Melt the chocolate in the microwave on 50% power for 3-4 minutes or until just melted.

If you don’t have a microwave, you can melt the chocolate in a double-boiler on a stove-top or in a Thermomix.

Step 2 – Mix

Mix through the chopped marshmallow eggs, the mini Easter eggs, Creme Eggs and the raspberry lollies until well coated in chocolate.

Step 3 – Chill

Working quickly, pour the mixture into a prepared tin and chill in the fridge for 2 hours or until set.

The Best Easter Eggs To Use In Rocky Road

This recipe is SUCH a great way to use up any leftover Easter eggs you have lying around. And yes, absolutely, you can substitute any of the recommended Easter eggs for your own favourites.

In this version I used speckled mini eggs, but you could easily replace these with crispy M&Ms or solid Easter eggs.

I absolutely love Cadbury Creme Eggs ,but if you’re not a fan, simply swap them for caramel filled eggs, Turkish Delight eggs or any other filled mini eggs you like!

When using filled eggs or Creme Eggs, ensure they are the mini eggs, as the larger ones will be too runny in the rocky road.

Note: if you live in a warm climate, pop your filled eggs into the fridge prior to making the rocky road. This will ensure they don’t melt when you mix them through the chocolate.

I also used Cadbury marshmallow Easter eggs, but if you want to save a little bit of money, plain marshmallows will work beautifully too.

Expert Tips

Quantity of chocolate

The key to a really good rocky road is to make sure you use a good quantity of melted chocolate. I love to pack my rocky road full of yummy add-ins, but if you don’t have the right chocolate-to-add-ins ratio going on, it will all fall apart in one big mess! This rocky road has the perfect balance of delicious add-ins and melted chocolate.

Type of chocolate

Use a good quality chocolate for melting. The melted chocolate is the main ingredient, so choose a good quality brand (such as Cadbury, Nestle, Lindt or Hersheys.

Adding coconut oil

I like to add a little coconut oil or vegetable oil when melting my chocolate. This helps to make it easier to cut the rocky road into pieces once chilled.

Preparing the rocky road

When making rocky road, it’s important to work fast!
The chocolate will begin to set quickly, so make sure your baking tin is prepared before you start! 

Using up leftover Easter eggs

This recipe is a great way to use up any leftover Easter eggs you have lying around the house after the holidays.

Storing

Place into an airtight container in the fridge and store for up to 3 weeks.

Easter Rocky Road

Instructions

Conventional Method

  1. Line the base and sides of a 16.5cm x 26cm lamington pan with baking paper, letting the sides overhang.
  2. Chop the marshmallow eggs into quarters.
  3. Place the chocolate and coconut oil into a heatproof, microwave-safe bowl and heat, uncovered, on medium (50% power), stirring every 30 seconds with a metal spoon, for 3-4 minutes or until the chocolate and coconut oil has just melted (or you can also use a double boiler on the stove).
  4. Remove from the microwave and stir until smooth.
  5. Stir through the speckled eggs, marshmallow eggs, mini Cadbury Creme Eggs and raspberry lollies.
  6. Working quickly, spread the mixture into the prepared lamington pan and sprinkle with the remaining speckled eggs.
  7. Place into the fridge for 2 hours or until completely set.
  8. Use a sharp knife to cut into slices.
  9. Thermomix Method

    1. Line the base and sides of a 16.5cm x 26cm lamington pan with baking paper, letting the sides overhang.
    2. Chop the marshmallow eggs into quarters.
    3. Place the chocolate and coconut oil into the Thermomix bowl and melt for 4 minutes, 50 degrees, Speed 2 (scraping down the sides occasionally). 
    4. Add the speckled eggs, marshmallow eggs, mini Cadbury Creme Eggs and raspberry lollies and mix for 5-10 seconds on Reverse, Speed 2, (using the spatula to help mix). 
    5. Working quickly, spread the mixture into the prepared lamington pan and sprinkle with the remaining speckled eggs.
    6. Place into the fridge for 2 hours or until completely set.
    7. Use a sharp knife to cut into slices.
