The easiest and most delicious chocolate packed Easter Egg Cookie Slice! Less than 10 minutes prep time and the perfect way to indulge in an Easter treat!

Hellooooo Easter-y goodness!!! Do you know what always makes me laugh… that t’s such an uproar about the supermarkets selling Easter eggs too early. WELL!!!! Let me just say, that when you run a food blog you neeeeeeeed them to sell Easter eggs early! I had to beg my local supermarket to let me buy the Easter eggs that were still stacked in boxes on top of their aisles so I could make this slice (ok… ok… I know it was only early January… but hey, I like to be organised!!!!).

Anyway, luckily these yummy Easter eggs came to my rescue and I can bring to you the easiest, the yummiest and the quickest Easter Egg Cookie Slice. Yep, it was worth battling to buy Easter eggs in January if it meant eating this slice.

What is a cookie slice?

Welllll!!! This slice is called an Easter Egg Cookie Slice because it’s just like 1 massive cookie… but in a slice. If you look at the ingredients, you’ll be surprised that t’s nothing to make it rise (no self-raising flour, no bi-carb soda, no baking powder… nothing!). This is because it’s a beautiful dense and chewy slice… just like a cookie (but with a whole heaps of Easter eggs hidden inside!!!!).

You can fill this yummy slice with absolutely any Easter eggs you like! Some that I’d recommend are:

  • Mini Eggs
  • Speckled Eggs
  • Mini Caramello Eggs
  • Malteser Mini Eggs

Ooh and I should add that this slice is highly addictive. And I mean HIGHLY addictive. To say that you’ll be hiding in the cupboard sneaking a few pieces is the understatement of the year. You’ll be eating the entire thing. I promise!!

Easter Egg Cookie Slice

The easiest and most delicious chocolate packed Easter Egg Cookie Slice! Less than 10 minutes prep time and the perfect way to indulge in an Easter treat!

Instructions

Conventional Method

  1. Preheat oven to 170 degrees celsius (fan-forced). 
  2. Grease and line a 20cm X 20cm square tin with baking paper and set aside. 
  3. Melt the butter in the microwave on 50% power, in 30 second bursts, until just melted. 
  4. Stir through the brown sugar and then the lightly whisked egg. 
  5. Fold through the vanilla extract and plain flour until just combined.
  6. Gently fold through the easter eggs and chocolate chips. 
  7. Spoon the mixture into the prepared tray and spread out evenly. 
  8. Bake for 25 minutes or until a skewer inserted into the middle comes out clean. 
  9. Allow to cool completely in the pan before cutting into slices. 

Thermomix Method

  1. Preheat oven to 170 degrees celsius (fan-forced). Grease and line a 20cm X 20cm square tin with baking paper and set aside. 
  2. Place the butter into the Thermomix bowl and melt for 2 minutes, Speed 2, 80 degrees. Allow to cool slightly. 
  3. Add the brown sugar and lightly beaten egg and mix on Speed 5, 10 seconds. Scrape down the bowl. 
  4. Add the vanilla extract and plain flour and mix on Speed 5, 5 seconds. Scrape down the bowl and repeat for a further 5 seconds or until just combined. 
  5. Add the easter eggs and chocolate chips and mix on Reverse, Speed 4, 10 seconds (or until combined). 
  6. Spoon the mixture into the prepared tray and spread out evenly. 
  7. Bake for 25 minutes or until a skewer inserted into the middle comes out clean. 
  8. Allow to cool completely in the pan before cutting into slices. 

Notes

Store any leftover slice in an airtight container for 1 week or in the freezer for up to 1 month.
