Christmas Lamington Reindeers take just 10 minutes to prepare and are a fun activity for kids to do in the lead up to Christmas! Grab a packet of lamington fingers, pretzels, Jaffas and sprinkles (or edible eyes!) and lets get started…

With Christmas just around the corner, now is the perfect time to get into the kitchen with the kids!

Just like my homemade Reindeer Food, Reindeer Noses and Chocolate Reindeer Brownies, these reindeer inspired lamington fingers are just too cute (and so easy!)

What You Need

Just a couple of delicious ingredients are needed to make these festive reindeers!

  • Lamington Fingers – these are rectangles of sponge cake coated in chocolate and coconut. They are very popular in Australia and are available in all major supermarkets.
  • Pretzels – you can use either mini pretzels or regular sized pretzels for this recipe. I used regular sized pretzels cut into smaller pieces.
  • Jaffas – these are chocolate balls covered in hard orange flavoured candy. If you can’t buy Jaffas, you can replace them with red Smarties or M&Ms.
  • White sprinkles or edible eyes – edible eyes look fantastic on these lamington reindeers, however they can be difficult to buy. If edible eyes aren’t available at your local supermarket, you can use large white sprinkle balls instead – or even small white chocolate chips.
  • White chocolate – to be melted and used to ‘stick’ the eyes on with.

Step By Step Instructions

It takes just 10 minutes to prepare these yummy little Christmas Lamington Reindeers!

Step 1 – Set The Lamingtons Out On A Board

Place the lamingtons onto a flat board or bench.

Step 2 – Decorate

Press the Jaffas gently into the centre of the lamington fingers. If using Smarties or M&M’s, use a little melted chocolate to hold them in place.

TIP: Don’t press down too hard or the lamington fingers may break.

Place a small amount of white chocolate onto the lamington fingers and ‘stick’ the eyes on.

Step 3 – Add The Reindeer Antlers

Press the pretzels gently into the top of the lamingtons to look like antlers.

W can I buy Lamington Fingers?

Lamington fingers are available at all major supermarkets in Australia. They are generally sold in packs of 18.

Can these be made ahead of time?

Yes! The Christmas Lamington Reindeers can be made a week ahead of time.
Note: the pretzels will soften over time and are best to be added closer to when they are required.

Can these be given as gifts?

Absolutely! Simply place into cellophane bags and tie with a pretty Christmas ribbon for a cute little homemade gift.

Storing

Store in an airtight container at room temperature.

Freezing

Christmas Lamington Reindeers are not suitable for freezing.
