What You Need

Whilst these cranberry and brie bites look fancy, t’s only 3 ingredients required – plus a little sprig of rosemary for that extra festive touch!

  • Puff pastry – 2 sheets, defrosted.
  • Brie cheese – a soft cows milk cheese, named after the French region it originated from. Brie is best served either at room temperature or warmed.
  • Cranberry sauce – either a whole cranberry sauce, or a jellied cranberry sauce.
  • Rosemary – a tiny sprig on top lends a subtle aromatic taste (optional).

Step By Step Instructions

Creamy brie pairs so beautifully with the sweet fruity, yet slightly tart, cranberry sauce and crispy puff pastry.

Step 1 – Prepare The Pastry

Preheat your oven to 190 degrees celsius (fan forced), and grease a 24 hole mini muffin tray.

Cut each defrosted pastry sheet into 12-16 squares (depending on how large you’d like the pastries to be).

Press the pastry squares into the bases of the muffin tin.

Step 2 – Add The Fillings

Cut the brie cheese into 24 equal sized pieces.

Place the pieces of brie into the pastry base.

Top the brie with 1 teaspoon of cranberry sauce or cranberry jelly.

Can I reheat or freeze brie bites?

These pastry bites are not suitable for reheating or freezing – as they lose their gooey cheesy filling! Serve immediately from the oven while still warm.

Whats the difference between Brie and Camembert?

Both Brie and Camembert are soft, creamy cheeses with an edible white rind, although Brie is slightly denser and has a higher level of fat than Camembert. A quality Brie has a refined taste and smooth texture, was Camembert is a more rustic cheese with an earthier taste and texture.
