These decadent Baileys truffles are the perfect adults-only dessert.

With a rich, boozy, chocolate ganache that is sure to impress any Baileys Irish Cream fan, these 5 ingredient truffles are the easiest no-bake sweet treat.

Baileys chocolate truffles, with their rich chocolate ganache and a punch of Irish cream, are the perfect chocolate treat with a boozy surprise. They are indulgent, luxurious, and one of the easiest Baileys recipes to make!

For decadent desserts with a Baileys twist, my Baileys brownies, Baileys self-saucing pudding, and Baileys Malteser cheesecake are always crowd pleasers.

If you really don’t want to cook, this Baileys chocolate brownie trifle just needs assembling, and you cannot beat a scoop of vanilla ice cream with chocolate Baileys sauce poured over it. Super easy and soo delicious!

What You Need

Homemade Baileys truffles are made with just 5 ingredients!

  • Cream – use thickened cream or heavy cream, not light cream.
  • Baileys Irish Cream – you can use store-bought or homemade Baileys, or substitute with rum if you like.
  • Butter – I prefer to use unsalted butter and then add a pinch of salt, but you can use salted butter and leave out the extra salt.
  • Salt – enhances the chocolate flavour.
  • Dark chocolate – use good quality dark chocolate melts for the best flavour and smoothest texture.
  • Cocoa powder, icing sugar, crushed peanuts or desiccated coconut – for coating the truffles.

Equipment Required

  • Microwave, and microwave safe bowl or jug – for heating the cream, Baileys and butter. Of course, if you have a Thermomix (optional), you can use that too!
  • Bowl & rubber spatula – for making the chocolate ganache.
  • Small bowls – for coating the Baileys truffles.

Step By Step Instructions

It takes just minutes to prepare this boozy truffles recipe, then chill in the fridge to firm up before rolling in balls and coating them.

Step 1 – Microwave

Heat the cream, Baileys Irish Cream, butter and salt in the microwave for 1-2 minutes (stirring every 30 seconds), until hot, but not boiling.

Step 2 – Leave To Melt

Place the dark chocolate melts into a bowl. Pour the hot cream mixture over the top.

Allow to sit for 5 minutes before stirring with a rubber spatula until smooth and combined. 

Step 3 – Chill

Place bowl into the fridge for a minimum of 4 hours (overnight is best).

Step 4 – Roll

Roll teaspoonfuls of the mixture into balls, and place on a baking paper lined tray.

Note: Mixture will be soft and sticky so keep it as cool as possible – see Tips.

Step 5 – Coat

Coat the truffles by rolling in cocoa powder, desiccated coconut, crushed peanuts or icing sugar. Store coated truffles in the refridgerator until ready to serve.

I like to do a combination of coatings as they not only look pretty, but it means everyone can choose their favourite.

Expert Tips

  • Type of cream – these Baileys truffles require thickened cream (as it’s referred to in Australia) or heavy cream (as it’s known in the US). 
  • Tips for rolling the truffles:
    • Leave the truffle mixture to chill in the fridge for at least 4 hours before rolling. I recommend leaving it the fridge overnight if you can.
    • The truffle mixture will be soft and sticky to handle. I recommended placing an ice pack on the bench and icing your hands between rolling each truffle. You can also place another ice pack under the bowl of truffle mixture to keep in cool if you like. 
  • Storing – Baileys truffles will last up to 1 week in an airtight container in the fridge or 3 months in the freezer.
  • Refrigerating the truffles – because they’re made with cream, these truffles need to be refrigerated until you’re ready to serve them.

FAQs

Can I freeze Baileys truffles?

Absolutely! Place in an airtight container with a layer of greaseproof paper in-between the truffles and freeze for up to 3 months.

Can I make these truffles without alcohol?

Yes! Add more cream instead of the Baileys Irish Cream.

  1. Heat the cream, Baileys Irish Cream, butter and salt in the microwave for 1-2 minutes (stirring every 30 seconds), until hot, but not boiling. If using a Thermomix: Heat the cream, Baileys Irish Cream, butter and salt for 4 minutes, 80 degrees, Speed 2.
  2. Place the chocolate into a bowl. Pour the hot cream mixture over the top.
  3. Allow to sit for 5 minutes before stirring with a rubber spatula until smooth and combined.
  4. Place into the fridge for a minimum of 4 hours (overnight is best).
