The ultimate Baileys Chocolate Ripple Cake decorated with fresh berries and chocolate…. this simple dessert takes just 10 minutes to prepare and is the perfect no-bake ‘adults-only’ recipe!

We all know and love a traditional Aussie Choc Ripple Cake – it’s such a classic recipe that everyone enjoys.

However it’s SO easy to take this recipe up a notch and make it into a delicious ‘adults only’ treat with the addition of smooth Baileys Irish Cream.

Baileys and chocolate just go hand-in-hand, and the smoothness of Irish cream liqueur adds a creamy, luscious flavour to so many dessert recipes.

What You Need

  • Arnott’s Chocolate Ripple Biscuits – these are a popular brand of biscuits in Australia and are used in many recipes. If Arnott’s Chocolate Ripple biscuits are not available w you live, you can substitute with any plain sweet chocolate cookie.
  • cream – use a cream that suitable for whipping (thickened or whipping cream)
  • Baileys Irish Cream – use store-bought or make your own.
  • fresh berries, chocolate and mint leaves – to decorate.

Step By Step Instructions

A simple 3 step no-bake dessert!

Step 1 – Whip the Cream

Using hand held beaters, a stand mixer or a Thermomix, beat the cream until soft peaks form.

Add Baileys Irish Cream to the bowl of whipped cream.

Gently beat the Baileys and cream together until well combined.

Step 2 – Assemble

Spread a line of whipped cream along your serving dish. This helps the biscuits stand up in a straight line when assembling.

Spread a teaspoon of whipped cream on to a chocolate biscuit then sandwich together with another biscuit.

Repeat in stacks of 3-4 biscuits, then place stack upright onto the whipped cream on the serving plate.

Once all of the biscuits have been sandwiched together, cover the entire log with the remaining whipped cream and then refrigerate, preferably overnight.

Step 3 – Decorate

Remove from the fridge.

When ready to serve, decorate with fresh strawberries, blueberries and raspberries, chocolate shards and a few fresh mint leaves.

Of course, you can use any other favourite toppings you like too!

How do I make my own Baileys?

Chocolate shards – how are these made?

To make chocolate shards, melt milk and white chocolate in separate bowls and then spread them over baking paper in a thin layer. Roll the baking paper up tightly and place in the fridge until set. When the chocolate has set, unravel the baking paper and you’ll have beautiful chocolate shards.

Why do you recommend chilling overnight?

This is important when making this Baileys chocolate ripple cake as the chilling time allows the crunchy biscuits to soften, to soak up the Baileys flavour, and to become soft and cake-like (the ultimate texture for any chocolate ripple cake!)

How long will this dessert keep for?

You can store this log in the refrigerator for 2 days. This recipe is not suitable for freezing.

Conventional Method

  1. Place the cream in a bowl and beat with handheld beaters or a stand-mixer until soft peaks form.
  2. Add the Baileys Irish Cream and gently beat through until combined.
  3. Spread some of the whipped cream along the base of your serving dish.
  4. Hold one chocolate ripple biscuit in your hand. Spread a teaspoon of whipped cream onto the flat edge and place another chocolate ripple biscuit on top. Repeat until you have a stack of 3-4 biscuits in your hand.
  5. Place the stack standing upright onto the cream on the serving plate. Repeat with another 3-4 biscuits and then join that stack to the serving platter to form one long log.
  6. Repeat until all of the biscuits have been used.
  7. Use the remaining whipped cream to spread over the entire outside of the log.
  8. Chill in the fridge. For best results, place log in the fridge overnight before serving (as this will allow the biscuits to soften). 
  9. Decorate with fresh berries, chocolate (see notes) and fresh mint leaves. 

Thermomix Method

  1. Insert the butterfly into the Thermomix bowl. Add the cream and beat on Speed 3 until very soft peaks just start to form. 
  2. Add the Baileys Irish Cream and beat again on Speed 3 until combined and soft peaks have formed. 
  3. Spread some of the whipped cream along the base of your serving dish.
  4. Hold one chocolate ripple biscuit in your hand. Spread a teaspoon of whipped cream onto the flat edge and place another chocolate ripple biscuit on top. Repeat until you have a stack of 3-4 biscuits in your hand.
